Those of you who were following us on FB last week, you were enjoying our process of completing our biggest cake we've ever done.

We were invited by Elements mall to replicate a Tin Tin cake inspired by his Blue Lotus comic book.
We were so excited to be apart of this project. We started planning the last 2 weeks of December 2011. Because of the enormous size we really needed to plan out the measurements of the cake.
After much planning, we concluded that we couldn't complete the cake at our kitchen premise but at the mall itself.
Working in a new location has its own challenges, but we were ready to take on the challenge, and boy we're so happy we did:)

2012 is off to a great start. All of us in Deelite have been busy brainstorming all of our exciting new ideas for our different departments: Retail, Classes, Cakes, Weddings, Parties etc....
Some of you may have noticed our new banner on our Facebook page:) Don't you just luv it.

We also just launched a brand new Facebook page: Deelite Cake Decorators Club. This will give you our latest news for classes, upcoming events, guest artists coming to Deelite and Deelite members VIP news such as pre-sale & free demos featuring new techniques & more. This fan page is different from our general Complete Deelite page because it focuses more on all the events, classes and promotions we will be doing. News & trends in the cake decorating world. So if you luv cake decorating and wanna join a community that inspires and shares ideas, this is the facebook page for you:)

Our Classes have been buzzing along with the New Year. Yesterday we started our Gumpaste & Fondant class, We Luv Cookies Class and also Wilton Course 2 Flowers class.

Our Retail store has been busy restocking all of our new arrivals:) I saw some of you at the store yesterday getting very excited about our complete range of Wilton Cut.Punch.Decorate line. Its a BIG LUV!!!

We Wish you all a very Happy New Year! May your year be filled with lots of sprinkles and cheer:)

It has truly been a spectacular year with lots of exciting things to share about.
We have so much planned for 2012 and can't believe we are right around the corner from counting down.

Before I get into 2012 I like to take some time to reflect on all the great times we had in 2011
Boy do we have so much to talk about for 2011.

We kicked off the 2011 with Cake Pops and Cake Pop workshops which were a HUGE HIT:)
We also got a chance to have some UHMAZING cake artists teach at Deelite.
Earlier in the year we had Mercedes and Alex Strawchsky

In September we had airbrush artist Edward and piping gel queen Janet Evers.

We also had a great time doing interviews with some pretty cool people and publications.

Boy did we get to Party at Deelite this year. We hosted some really great corporate functions and private decorating parties
Here is a bunch of ladies having a great time celebrating with a Deelite cupcake party.

We hosted a fab Halloween party for HTC phones to launch their new 3D Phone.

For a grand Tiffany & Co celebration, we made Tiffany inspired cupcake towers for their dessert table.

And of course our many cakes, cupcakes, cookies & treats we made. Not one creation is better than the other, its great being a part of so many memorable moments. And most of all I get to share it with all of you.

Here is a wedding cake we did recently. Now that's a way to bring in the New Year:)

It has been another amazing Holiday season for us in Deelite. Hard to believe it is our 8th Christmas.

Here are some highlights from our Christmas creations.

May your Christmas be filled with lots of sweet memories with all who are closest to you:)

Our Holiday Cookies were a huge hit this year. Here are a bunch of snowman's getting packed up for a special Santa delivery.

We also made some fabulous Christmas Gifts for Christian Dior & Royal Caribbean Cruises.

Last but not least, we had the joy being a part of Quintessentially's Christmas party .The venue was breath taking and it was so cool to see the events coordinators transform the chic venue into a Christmas wonderland. We made a 9ft tall Snowman Cupcake Tower with a Snowman Topper Cake. Everything was custom made to their theme so I'd like to think this is the sweetest & coolest snowman cupcake tower ever:) Well, I'm sure Mr. Snowman in north pole is pretty darn cool too.

Tis the season to celebrate not only Christmas but birthday's too:) Here are our latest celebrity events.

We had the joy of making a Crown theme cake for Movie Star/Singer Aaron Kwok. The singer celebrated his birthday last week.

For Madame Tussaud's 250th birthday, we had the joy of make them a giant cake topped with a wax doll cake which was surrounded by cake pops and cupcakes:)
Here is our creation with actress Cheung Ho Yee.
Now that's the way to celebrate being 250 years old!!!

Luk Fook Jewelry company launched there new Forever Love jewelry line actor Raymond Lam. The day of the event happen to be Raymond Lam's birthday as well. So they surprised him with a Jewelry box cake:)

Cake Pops for Pacific Place Mall

We custom made 3 cake pop towers for Pacific Place Mall's New Renovation Launch event.
We designed the stands to match their swanky new make over. With their fabulous new make over, leave it to Pacific Place to be right on trend. They specifically wanted 3 fabulous cake pop towers. And we were very happy to be apart of their celebration.

We made hundreds of pops in the color theme of pink, red, gold & bronze.

Luving the bronze sugar on these pops.

We assembled the pops onto their custom cake pop towers.

Thanksgiving is right around the corner. Wooooo Hoooooo. I LUUUUUUUUUUUUUUV thanksgiving. It kick starts my festive mood:)
And like every year, our turkey gobble gobble Turkey Cupcakes are always the most popular.

This year we lauched our Homestyle pumpkin pies:) My ultimate favourite pie in the whole wide world. Apple being my second. I use to eat pumpkin pie for breakfast when I was a kid. I didn't really like breakfast food like cereal, milk or toast......I was a stange one I know. I luved pumpkin pie so much my mom decided to serve that to me for breakfast. :)Lucky me I know..... Every so often we would get a super treat with an extra dallop of whip cream on top. I was the happiest kid in school. Pumpkin pie brings a lot of fond memorie for me. Through college Me and my roommates would always do a lil Thanksgiving get together before we went off on our Thanksgiving holidays. I liked to bake a pumpkin pie from scratch.
Years after that I was blessed to meet some really great Pie Connoseurs......and Tah Dahhhh We have the Perfect most deeeeeeeeeeelishes pumpkin Pie. We bake it entirely from scratch so you don't have to worry about any pre-frozen anything.

Rainbow Peony Wedding Cupcake Tower!

We made a Gorgeous 6 Tier Rainbow themed cupcake tower for a vibrant wedding celebration.

The Rainbow Topper cake was adorned with a fabulous bouquet of colorful Peony's & the tower was covered with 120 variety of colorful floral buttercream cupcakes.

Everything at the wedding was colorful and the setting and tables at the reception even coordinated with the cupcake tower color theme.

Its a rainy & gloomy day today in Hong Kong:(

So I know this video will bring some sunshine along your way.

I taught my last cake pop class of the year. We had a blast and my students got really creative with their pops:)

From Dogs, to Chicks to princesses, pigs and more....

Every year we hold a 3 day cake decorating seminar with South Island School high school teens. Year after year, the Deelite Cake Deco program gets more and more popular. I wish I had this in high school:)

We were so impressed by their natural skill and talent when it came to teaching them piping techniques.

Every student got a lesson on cupcakes, cookie and cake decorating.

Here's a student that's planning ahead for the festivities.

Here are our latest wedding cakes:)

One of our baby violet orchids wedding cakes was featured in Cosmo Bride:)

Not only that, our cake got an entire 1 page feature.

Thank you Cosmo Bride!

for another wedding celebration we created this fall inspired 3 tier cake.

We added an extra cake stand in the middle to give it a no traditional look. All the flowers on the cake were done with Damask stencil finish and then highlighted by hand to give it more dimension.

This pretty in pink cake was a perfect design for the couple wanted a classic and simple & classic cake. We dressed the top with a giant satin bow.

and drizzled the middle tier with pretty shads of pink flowers. The bottom tier we finished off with pleats and a lace broach.

For a simple and relaxed beach wedding. We made a simple cupcake tower highlighted with forget-me-not flowers.

Last but not least, here is an elegant white monogram wedding cake made for a not so traditional couple. You're probably wondering whats so not traditional about his cake????

Before I get into that I want to highlight that we did a replica of the couples monogram on the topper cake which also matched their wedding invitations.

Now the not so traditional part:)

SO MUCH FUN!!!

We received a surprise message from the bride:

"Just want to say Thank you for delivering an absolutely delicious and glorious looking cake. It was exactly as we had envisaged and discussed. But most importantly, it tasted divine. All our guests raved about how good the cake was.

Halloween News, Christian Dior Cookies & Macao Cupcakes!

We were swept away by a lot of excitement last week. We had our Halloween Super Sale, Fabulous Cookies for Christian Dior and more. I promise these photos will make up for my absence:) Halloween came and went and I can't believe the year is nearly ending. Is it me or did 2011 just zip by . Our Halloween themed cupcakes and cookies were as popular as ever this year.

We received a sweet lil email yesterday from our deelited fans:

"Comment from a six year old classmate which I was asked to pass along to the baker - "These are the best cupcakes in the world!"

HTC held a very special Halloween themed product Launch party for their VIP guests. And guess who got be apart of this event???We did!!! who said gadgets and icing don't go:) The launch party was held in our classroom and the event was a huge hit!

Not only did our VIP guests leave excited about the New HTC 3D phone, they had a blast making their Halloween cookies.

More cookie news.... We made 600 of these Fabulous cookies for Christian Diors V.I.P guests.

They held an exclusive event to launch their 2012 resort collection. Hence the fabulous sunglass cookies:)
LUV!!!

Our cupcakes also received VIP treatment too.

For a super princess party, we made 250 of these GORGE glittery crown and shoe cupcakes accompanied by 7 of our cupcake towers. They were whisked away by helicopter for the extravagant birthday celebration in Macao.

Our cupcakes have experienced things I've never done:)

Highlights from Edward Fry's class!

We had a great week with Edward Frys'. Time with him just flew by.

Here are some highlights:)

Here is the first day of class where the students made friends with their airbrush machine and did some stencil work.

They also learned how to color shade on a cake with out the cake looking muddy.

One of their final projects was to airbrushing a mask. Highlighting all the facial features.

They also got to beautify their beautifully sprayed rainbow cake with hearts. LUV!

My favourite part and also I'm sure it was the students fave part too.

They got a chance to take photos with Edward wearing his Food network cake challenge chefs jacket:)

Oh and also pose with him wearing their gorgeous masks:)

Don't think I missed out on this fun....

I even had a hand in airbrushing.It was really great learning from the Master!

Janet Evers Demo & More

Its been an exciting month. Fall is here, Janet Evers was here and Edward Frys is here. We really don't have anything to complain about :)Here are some highlights from Janet's Demo. It was truly inspiring to watch her decorate with piping gel. Most people including myself know piping gel as a medium that thins icing out for writing & to make water.

But oh no not Janet, with Premium Piping gel, she really inspired us to think out of the box and see the endless possibilities of this gel. I love working with the Gel, its so easy and great to work with.

The consistency of the gel makes it so easy to pipe a glass like finish on these Christmas lights. And also get a real flame like finish on the candles.

its also great for stenciling. Look at this cute Halloween Stencil.

The best part is the text. Luv the multi color finish.

You can even pipe with this icing gel and it won't drip everywhere. Look at the beads on the side of the cake.

As you can see we all had a blast with Janet. Over 60 ppl came to attend her demo. We left inspired and very excited to decorate:)

Yes, I'm still around:) Its been a while I know.....I"ve just been a lil caught up with preparing for Edward Fry's and Janet Ever's arrival.

Fashion Glitter 21st Birthday Cake!

We got a phone call from Heathrow airport in London asking us to do a SPECTACULAR, Sparkly, Fabuloso 21st birthday cake. The young lady was in transit and wanted to make sure her cake was in order before flying. LUV IT:)

As requested she wanted her colors to be pink, silver, black with a lot of sparkle. LUV IT:)

We accessorized the side of the cake with all sorts of fashion must haves.

So sorry for my absence, I've missed yáll too:)

I can't believe summer is coming to an end:( The bright side is, my fave holiday is right around the corner WOOOOOOO HOOO Christmas. I have my reindeer headband in my office waiting for me:)

Can you believe we've almost been in our new store for 1 year. Its been a very good year indeed This summer we spent a lot of time doing some improvements.

Hope yáll luv it as much as we do. :)

We've added more shelving into our store so that we can show off more goodies.

Here's our new and improved packaging & cake board area so that its easier to find what you want.

We've also expanded our range of products in the packaging department.

Our brand new book area with more magazine and book selections. Here's a photo of me in the book area last year during our grand opening. Look to your right, there are only 3 books on the wall .

You would never think so as the room is so small, but I spent quite a bit of time decorating our consultation room. We added a pretty fuchsia lampshade(don't know why it looks red in the photo) and spruced up our walls.

Here's what it looked like before when Mercedes Strawchsky was doing her book signing in the consultation room. If you see in the back walls it looks a bit drab. Ok.......not just drab it looked SO SAD:(

Tah Dah, look at it now! HAPPY WALL:)

We redid all of our classroom floors so that its less slippery. Like the floor and my pink hippo Birkenstock:)

Luving our new blinds in our classroom too.

We're almost done with all of our classrooms. The only one left is classroom #3. We're adding in an open kitchen/demo area.....LUUUUUUUUUUV!!! I can't wait for it to be finished.

Last but not least,
We have a new cupcake flavor. Toasted Coconut:) ITS DEELISH.

Since 2004 we've seen cupcakes evolve from trend to a main stay classic.

So happy that cupcakes are here to stay!

Here is a Cupcake tower inspired by one of our most popular Cakes-to-Go designs.

Party Animal. We took it up a notch for this birthday celebration and made a Birthday Diva Cupcake Tower.

For a baby shower, we matched 3D baby bootie cupcakes with a Baby Bootie topper cake.

I LUUUUUUUV the texture on the booties and the baby blocks on the topper cake.

For a Tinkerbell celebration, we designed a fairy cupcake tower for this whimsical birthday party.

And last but not least, for a beautiful Garden wedding we showered this cupcake tower with an array of flowers.

To match the flowers at the reception, we decorated all the cupcakes with Hydrangea & Tea Roses in beautiful shades of English Lavender and Periwinkle.

Summer is just flying by so quickly. Our students have been decorating with the added element of SUMMER HEAT. In Hong Kong, we don't have dry heat but very humid-wet weather and scorching sunshine. Even with the hottest conditions, our students cakes have been looking fabulous:)

Jacinta Yu opened her party-wares shop in Lan Kwai Fong seven years ago. She was one of the first to sell party supplies in Hong Kong, importing from the United Kingdom and United States.
"When I was young, I loved hosting parties," says Yu. "I did everything myself and had to visit several different stores to get what I needed for a party. So I decided to open my own store that sells everything related to throwing parties."

Yu tries her best to satisfy customers. She offers 10 wedding cake flavors and endless cake topping ideas. "I have to be continuously inspiring. If someone copied my ideas, then I will come up with something completely new tomorrow."

How to make Beach Flip Flop Cake Pops!

Summer is officially here! And to kick off this sizzling season, why don't we make some flip flop cake pops. Aren't they the cutest:)

What you Need for CakePops:

-Cake Crumbs -Cream Cheese Icing -Lollipop Sticks -Styrofoam Block

What you need to decorate your Flip Flop Pops:

Edible Food markers-Oval Cutter-Food Writer-Blue Candy Melts-Cookie Crumbs

-Edible food markers (Wilton) -White Fondant (Satin Ice) -Oval (Wilton) cutter set.

You will be using the smallest oval cutter.

-Blue Candy Melts (Wilton) -Cookie Crumbs (edible sand)

Now that we have all our ingredients and goodies. We can make our flip flops.
1) Roll out a small piece of white fondant.

3. Use your smallest oval cutter and cut out all your oval shapes.

4. To make your flip flop shapes, you gently squeeze the center of your ovals making a waistline

6. This is the most important part, you will have to flip all your flip flops.

As soon as you do that, you will start to see your flip flops come to life.

7. After flipping all your flops, dry out you flip flops just a bit, (about 10 minutes). I know, you're so excited to use your food writers but trust me, just 10 minutes will make drawing on your flip flops so much easier.

Tick , tock, tick , tock .......

8) Ahhhhh after 10 minutes you can now start drawing:)

And you can use as many colors as you like:)

After drawing, set all your beautiful flip flops aside and we can start decorating our pops:)

If this is your first time making cake pop or you need a refresher on how to dip and melt your candy melts. Watch this DIY Cake Pop video and I promise you will be a cake pop pro:)

What you Need for Pops: -Cake Crumbs -Cream Cheese Icing -Lollipop Sticks -Cookie Crumbs -Styrofoam Block -Candy Melts

9) Melt your Blue Candy Melts and dip your lillipop sticks into the Cake Balls

(as shown on video)

10) Dip your pops into the Blue Melts or shall we say Blue Ocean:)

11) Dunk your blue pops into your bowl of cookie crumbs (Sand) and place it into your styrofoam block.

***Tip: Before dunking into your cookie crumbs, make sure all your blue melts have been tapped off of your cake pop (watch video) or else your cookie crumbs will start to cry :( and drip off your pop.

Take one of your pretty flip flops apply some candy melts onto the bottom of your flops with a tooth pick and then stick them on top of your pop

YAY!!!!

You can even bedazzle your flip flops with edible glitter. FABULOUS!!!!

Crazy for Angry Birds!

Is it me or have angry birds taken over the world?
To do some research for my cakes, I got into playing the birdy game. As much as I think monkeys are cute, the monkeys in the Angry Bird game drive me BANANAZZZZZ. I have to turn off the volume just so I don't hear the monkey's snicker whenever I miss them.

Needless to say, I much prefer to make the birdies than play the game.

Golden Roses Wedding Cake

for a golden wedding celebration at the Grand Hyatt.
We highlighted all the decorations with Gold Dust.

Not one decorations was left without a brush of gold.

Our students have been doing some amazing work too. Its amazing how everyone's individual personality comes out in their final cake. They all learn the same techniques and skills in class and thier cakes all look so different. I luv it!!!

For a masquerade themed birthday party, we made a 3 tier cake with tons of glitz, glamour & glitter.

Everything on the cake is edible. We made all the masks with gumpaste accented it with powder color dust and glitter.

even the feathers are made out of Gumpaste.

I often get asked what my favourite cake is to decorate. It's always hard to say as I LUV to decorate cakes so I guess ....everything????Which is kinda a boring answer.

After all these years, I've finally discovered my favourite type of cake I LUV to do. Its not really a type of cake but more about the story I imagine in my mind when I'm doing the lil details. The lil details always make my day.
Like when Mr. Monkey is grasping onto #1 as his other hand is holding onto his prized Banana:)
Cuz we all know Mr. Monkey will never let go of his banana not even to share with the birthday girl:)

Or when we're asked to make a cute bear on top of a spring themed cake. I imagine the bear sitting so pretty with her pink bow on her head surrounded by a shower of the sweetest

spring flowers

A simple cake for Summer Pool Party always makes me laugh. I imagine everyone having so much fun in the pool they don't even want to get out to eat cake:)

I giggle every time I make the lap swimmer as he's trying to weave between the party animals. My ultimate favourite part is adding the splash marks on his body. I literally feel like I"m swimming with them at the party.

For a Romantic English Wedding I loved the Drapes and pearl drops that dangle dainty flowers on the edge of the cake. As the bride also had similar details to her dress it was so wonderful celebrating her special day with her

I also luv doing designer bag cakes but my favorite part was adding the pretty flutterflies to the bag.

I imagine the dainty colorful Flutterflies fluttering everywhere as she is blowing out her candles.

Last but certainly not least. Even spiderman couldn't get away without a lil detail.:)

P.S it was pulling teeth trying to take away our red bow from Spiderman's hands before packing him up for his birthday party.

I was so excited when we got a request to do a piggy themed cake.

We made the cutest piggy birthday cake for Quintus' first birthday.

I was smiling the entire time I was sculpting the piggy.

I got a lil surprise on my desk the day after we delivered the cake.

A lil birdy dropped off a newspaper and our Piggy got its 15 minutes of fame:) Woooo Hoooo

Mercedes class and More Part 2

Mercedes and Alex are back home in Orlando and we miss them dearly. We had an amazing 2 weeks with them and lots of fab memories. Our students díd fantastic work in all of the classes. Here are some highlights from Mercedes' Handbag & Shoe & Topsy Turvy , Gumpaste Flower and Wedding Cake Class.

Since we're on the topic of shoes, I couldn't wait another day to show you these delectably adorable eensy weensy stilettos we made for a very special celebration.

We made each stiletto with very light pink gumpaste and dusted it with pink pearl dust.

Back to Mercedes classes. The day after her Handbag and Shoe class, we had a whimsical time learning how to stack and decorate Topsy Turvy Cakes.

Last Thursday and Friday was her 2 day Gumpaste Flower class. The students learned a beautiful assortment of Gumpaste flowers. Calla Lillies, Orchid, Giant Rose and more.

We capped off Mercedes' week with her Wedding Cakes Class.

Some of you may have also seen us at the Satin Ice booth at the Hofex convention last week. I did some demos at the booth. It was really great meeting all of you there.

Hi Hi, we're still here:) So sorry for the long absence, Mercedes and Alex arrived and before I knew it a week flew by. I got lots to share so I won't delay any longer.
Last week was so super dooper exciting, I thought I"d do a week in review.
Mercedes arrived and we kicked off the week with her first class:

Fundamentals of Fondant.

Following day Mercedes did her fabulous figurine class. The students had so much fun making their Animal Figurines they almost missed out on Mercedes Fabulous Fairy. Not to worry, there was no way we would dismiss the class without them seeing this UHMAZING fairy completed right before their very own eyes. I was super impressed by our students figurine work as all the students came from many different levels of cake decorating.

Before I get into the next thing, I wanted to take a short lil commercial break and share that we made some fabulous treats for Petit Bazaar's store grand opening.

All their Cake pops, Cupcakes and Cookies were all coordinated in pink.

And we also celebrated Kowloon International School's 75th birthday. We made a GINORMOUS Antique Book cake and 1,200 cookies for this monumental birthday celebration.

Now back to the Strawchskys':) The day after Mercedes' figurine class, Master Pastry Chef Alex taught his baking class. I was so blown away with what he taught I wish I signed up for the class too:)

The students learned the fundamentals of how to adjust any recipe to their personal taste. How to make different types of icings, tres leche cake,& caramel cake.

It was so cute, Alex waited for Mercedes to come out to help with pulling the Caramel as he said "she loves to pull the caramel"Awwwwwwwww:) LUV!!!

Mercedes sure does luv pulling that caramel! The cake was GORGE!!!!

This week, we have Mercedes handbag and shoe class, wedding cakes and Gum paste Flower Class. I can't wait to see all the goodies the students will be making.Keep y'all posted:)

Mercedes Strawchsky and family will be at Deelite in less than a week. We've been busily organizing and preparing for her arrival. Her classes are gonna be UHMAZING!

We got a request to make a smiley face cake for a 30th birthday party.

The birthday girl also wanted her kitty with her so we made a cute lil kitty playing around with her yarn balls. And to really make it a 30th celebration I will now need you to close your eyes and imagine. Deelite + Corporate Events = FUN FUN FUN!!!

We've been having fun with all kinds of corporate celebrations.

We had a great opportunity to host Maurice Lacrois' press conference at Deelite to launch their new line of watches.

We transformed our classroom into Maurice Lacrois'press room and it was fabulous!

we also made some fabulous watch cupcakes to replicate their new designs for 2011. I started off the press conference with a fun demo on how to make watch cupcakes. Not only was it a great ice breaker, it was a great opportunity for everyone to roll up their sleeves and get creative:)

All the participants received these fab gift bags with lots of goodies and a watch cupcake.

For another corporate celebration. We made this Rose box cake for Olympian City Mall's birthday celebration.

We filled their birthday cake box with a potpourri of flowers.

And last but not least, we made Franklin Templeton's corporate favors for their 20th birthday celebration.

The birthday girl LUVS to sleep.
Her sister made a special request to design a 3D mushroom cake with her sister doing her favorite thing. Sleep!!!
What a great idea, we had a blast making the cake too.

My Wedding Cake!!!

Happy New Year!!!!

Finally as promised here is my wedding cake!

I thought it would be great to start off the new year with my Wedding Cake.

My wedding cake project was the most memorable moment of 2010:)

I hope you are inspired by this cake to continue doing what you are doing whether it be baking for your friends, decorating for fun or aspiring to be a professional cake decorator. I started off with a simple shell border and cabbage looking buttercream roses at Wilton Decorating School 6 years ago. I never thought in a million years then that I would be able to make my own wedding cake.

The secret to making your dream cake is simple.....Dream Big, Decorate with Passion, Love every cake you make even if it doesn't turn out the way you want.
Perfection is over rated and at the end of the day, your love for decorating will speak through all your cakes and people will be "WOWED" by your passion and not by how "perfect" your cake looks:)

Here's a photo with my cake at 2am in the morning when I fully completed the cake.

It was the best feeling ever!!!

2010 Count Down - Part 1

As we're counting down our last days of 2010, we've made it a tradition here to go through all the moments of the year. This year has been action packed for us. The move,working together with Mercedes Strachwsky & expansion of our classrooms were a few of our highlights of the year. Its hard to believe that we've been in our new home for 4 months already. Geez time zips by so quickly.

Of coarse our greatest achievements and most memorable moments is being apart of all your celebrations through our cakes, cupcakes and cookies.

We've spent the past week collaborating our most popular cake, cupcake, cookie requests.Here are our 2010 highlights. Hope you enjoy this as much as we did.

How to bake Gbread Cookies:)

Since our Gingerbread mix has arrived, I couldn't wait to try them out.

I set today as the official day to bake them as I always make yummy special treats for friends and family for Christmas. Time is limited for me since I didn't have much time to think of something original this year as I was preparing for my wedding.
So an Easy Box of Gbread cookie mix seemed like the perfect choice this year. Before happily decorating and giving them away to friends and family, I had to do a taste-bake test. I'm Over the Moon excited to annonce that this Gingerbread cookie mix is SENSATIONAL, OUT OF THIS WORLD, UHMAZING. Now when have I ever used the word sensational????Annnnd
smells and tastes Grrrrrrrrrrrrrreat!.
So lets get started!!!You'll need:
1 box of Gbread cookie mix, 1/2 cups water, 1/2 cup Vegetable Shortening, Electric Mixer, Spatula to mix, rolling pin, Cookie Sheet.
Preheat your oven to : 400 Fahrenheit or 204 Celsius

Measure 1/2 cups of Shortening and spoon into mixing bowl

If you don't have a Kitchen Aid

#1: Put that on your Santa's request list:)

#2: You can use any standard mixer. If you don't have the below paddle use the whisk paddles which will probably be your only choice. You just have to work the mix more with your spatula and it may take you a bit longer to get the dough out of the whisk. But, its doable

The instructions on the box says to use the hook tool, but I found that it works just as well with the beater paddle.

Cream your shortening like so.

Open up mix #1 & Measure 1/2 cups water

Take your 1/2 cups water and Ingredient mix #1 and pour it into the shortening.

Tip: Put each ingredient alternatively. This helps the dry and wet ingredient mix better.

You will pour a bit of water, then a bit of mix. If you run out of water, not to worry just pour in the rest of the dry ingredient. This recipe box is full proof so not to worry, your gingerbread cookies will be deeeelish!

It will look a bit unpleasant at first, Scape up the mix on bottom of bowl with spatula, give it a few more spins and it will suddenly transform into heavenly gingerbread goodness.

Pour in the ingredients from Bag #2

Tip: if you don't want to end up looking like snowman, pour in your mix slowly and not the entire bag at one go.

Mix for another 2 more minutes and you will see your mix slowly transform into dough consistency.At this point, you start to really smell gingerbread all over your kitchen:)

Done! I told you its easy

Don't forget to scrap out all your dough from the bottom of your bowl.

Roll your gingerbread dough into a nice squishy ball:)

Place your gingerbread dough on your rolling surface.
You can slightly flour your surface to avoid sticking or roll on top of a parchment paper

You will roll the dough into appx 1/8"thick

Grab your cutters and get ready to cut out your gingerbread boys/girls

I couldn't resist this pack of Gingerbread Family Cutters. Aren't they cute:)

Gently press your cookie cutter into the dough

Peel off the dough around each shape and lift each cut out shape with a spatula and transfer it on a cookie sheet

We bake our cookies with parchment paper on our cookie sheet pan. You can bake it however you usually like to bake your cookies. If you're use to baking without parchment paper and directly on pan or with a silicone mat, your cookies will come out just the same as ours.

Yay! Happy Family

Bake in your oven for 10-15 minutes or edges of cookies are golden brown.

if you plan on decorating these cuties, wait till they are fully cooled before dolling them up.

or you can just dive in and gobble them up nice and warm:)

I'm still here:) I know I"ve haven't been blog/facebook present, but its for a very very good reason. I PROMISE!!!! You will fall off your seat when I show you the video and photos. We're not totally finished with the surprise project video/photos but I PROMISE YOU, you will LUUUUUUUUUUUV it more than anything you've seen in Deelite...Well, maybe I"m pushing it, I'll allow you to be the judge for yourself. But I will say this, it is my favourite cake I"ve ever done with Deelite:)

Little Big News!

We got a little surprise a few weeks ago.

I"ve been meaning to blog about it but got a little carried away with our Grand Opening event.

Little Steps Hong Kong posted our adorable halloween cupcakes on their website.

Yaaaaaaaay! We were so happy to know someone out in web world loved our Halloween treats as much as we did:)

I know we are Waaaaaaaaaaaay past Halloween but

Good news is never late news. :)

Speaking of good news, I'm so happy Halloween is over because soon it'll be Thanksgiving and you know what happens after TG.........YAAAAAAAAAAAAY

Grand Opening, Mercedes and More~!!!

We had one of our most memorable weeks ever in Deelite.

We celebrated our Grand opening, Arrival of Mercedes Strachwsky & Kevin (President of Satin Ice), enjoyed an entire week of Mercedes workshops and most of all hangin out with Mercedes Allllllll week. No words can explain how much fun we all had here in Deelite.
Here are some photo highlights.

Mercedes' seminar was a amazing. The class started at 9:00am.

Tons of cake saving techniques and tips were taught.

All the cakes were so beautiful. Mercedes wanted to teach a lot of very important techniques about working with Gum Paste and Fondant as well as introduce some new ideas for the Holiday Season. So the students decorated 1/2 of their cake in Halloween theme and the other half Christmas theme.

After the full day seminar, Mercedes did a book signing session.

Halloween Candy!!!

I'm jumping with excitement about Mercedez coming to Deelite this week. Eeeek!!!! Oh if only she could just snap her fingers and appear:) Soon enough yáll will get to meet her. For those of you lucky ones who signed up for her class, get ready cuz its gonna be fun fun fun!!!!!:)

If you've been following us on Facebook, Mercedes also posted on our wall saying she's excited too. Its her first time to HK and I can't wait to show her around.

Aside from prepping for Mercedes grand arrival, we've been busy making Halloween treats. Tomorrow, Mercedes and I will be doing an interview with Apple Daily. We'll be doing a demonstration on Halloween treats:) Eeeeeek I know. SOOOOOOOO EXCITED.

Just to give you a head start on your halloween goodies, I thought I"d make some goodies to get you started about making your treats this year.

I love our Halloween candy kits because everything you need is all in the box. What more can you ask for. Annnnd its super dooper easy peasy!!! PROMISE:)

First open up your candy box of goodies.
take out your candy molds, melts, bags, lollipop sticks.

Stick you candy melts in your bags and melt them in the microwave.

Pipe out your nail color on your fingure mold. I like orange and purple so used those for my nail color

See how easy it is

Then I took the green bag and piped over my nail

Stop half way then put your lollipop stick in

Then pipe over your lolli stick

Cover the stick entirely

The most important part. Tap your tray so to get rid of all your air bubbles.

After fridging them for 10 minutes, pop out your fingures and TADA!!!!

You got perfect ugly fingures:)

Eeeeeek I'm so excited I just can't hide it:) I had the joy of meeting Mercedes just a few months ago at the ICES convention. Some of you cake maniacs saw me out there too:)

There's nothing like hangin out with a bunch of cake maniacs. For 3 days, I talked, ate, dreamt, saw, listened, and did I say talked about Cakes cakes and MORE CAKES:) The best part about it was everyone around me was just as enthusiastic about cake decorating as I was!!!!

Ahhhhhhhhhhhhh Cakes=Bliss.

Ok back to the fabulous Mercedes:) I met her for the first time at the Satin Ice Booth demonstrating her fondant art. I've always been a HUGE fan of hers. But seeing her magic fingers sculpt and mold, twist and turn the fondant ever so gently and quickly into an art piece was just out of this world.

The cake on the left was her famous cake in which Kerry Vincent herself said "Every detail was pretty much perfect, even to the embellishment on the edge of her cake board. Truly worthy of being in a museum.”

Cupcake Tower Celebrations!!!

Our cupcake towers have always been a very popular choice for all sorts of celebrations. It is a guarantee crowd pleaser and there's nothing better than not having to worry about cleaning up the plates after serving the cake. Cupcakes are just perfect to serve just as is and we LUV that!!! Their cute, low maintenance and OH so memorable. Here are our latest Cupcake tower

We made designed cupcakes topped with shooting star toppers for a company event at HSBC.

For a memorable 60th Birthday at Polo, we designed really fun glittering topper cake accompanied with an assortment of Polo Shirt, Margarita and Champagne bottle cupcakes.

For a fabulous wedding at the Heritage, we made a Rose cupcake tower with a Bling Topper engraved with the couples initials.
